Here are some of the more interesting ones:

There were quite a few changes in the 7.5 update. For example, the screenshot below shows the tuning options as it was when GP7 launched:

The major 7.5 update improves a lot of areas that initially felt like they were a step backwards from GP6. Having those three buttons always available makes it really quick and easy to access the right tools needed. While GP5 & GP6 often felt cluttered, GP7 feels more streamlined and organized. It’s such a simple feature but makes it easy to change your screen depending on what you’re doing (eg: writing music vs jamming). You can toggle these three panels on and off at any time by clicking the three buttons on the top right of the screen:

Personally, I had to take some time to become accustomed, despite being a serial user of Guitar Pro 6, but not a lot of time. To be fair, version 6 still looks pretty current and not as antiquated as 5 now does, but 7 has an altogether new and fresh look. Perhaps the most notable (pun intended, sorry!) difference between version 7 and version 6 is in 7’s appearance. It’s certain that there are even more uses than just these, but primarily, these will be its uses for guitarists or bassists. Like other versions of Guitar Pro, 7 will allow you to download transcriptions from web sources like Ultimate Guitar and 911 Tabs to learn from or jam along with, but it’s primary use is in allowing you to score your own music, as well as to create backing tracks to play to.
